- 1/4 cup bacon grease
- 1/4 cup clarified butter
- 1/2 cup diced peeled potato
- 1/2 cup diced celery
- 1/3 cup diced red bell pepper
- 1/3 cup diced onion
- 1 teaspoon chopped garlic
- 1 teaspoon thyme
- 1 teaspoon seasoning salt
- fresh ground black pepper
- 3/4 cup all-purpose flour
- 4 -5 ounces port wine
- 2 quarts water
- 1/4 cup lobster base
- 4 ounces tomato sauce
- 1 lb alligator meat (trimmed and cubed)
- hot sauce, to taste
Directions

1In large sauce pan, grease and butter on medium.

2Add potatoes and celery.

3Cook about 3 minutes.

4Add all remaining veggies, including garlic.

5Cook 3 minutes.

6Add seasonings and flour.

7Cook for about 3 minutes (do not cook on high-butter and grease will turn brown).

8Keep at Medium.

9Add wine, water, and lobster base.

10Cook 3 more minutes.

11Add alligator meat.

12Cook for 5 minutes only.

13Do not overcook.
