Ingredients

  • 3 c. tomato juice
  • 3 Tbsp. olive oil
  • 3 large tomatoes, peeled, seeded and cut up
  • 1 cucumber, peeled, seeded and cut up
  • 1 small onion, cut up
  • 1 small green pepper, cut up
  • 1 small garlic clove
  • 1 tsp. sugar
  • 3/4 tsp. salt
  • 1/2 tsp. hot pepper sauce
  • 1/2 c. cucumber, diced and seeded for garnish
  • 1/2 c. chopped onion for garnish
  • 1/2 c. diced green pepper for garnish
  • croutons for garnish

Directions

    In covered blender container at high speed, blend first 10 ingredients 1/3 at a time until fairly smooth.

    Pour into large bowl; cover and chill.

    Serve in soup bowls and pass chopped vegetables and croutons for garnish.
