Ingredients

  • 6 large tomatoes (2 1/2 pounds)
  • 2 cups tomato juice
  • 1 cucumber chopped (1 1/4 cup)
  • 1 med. onion chopped
  • 1 small zucchini diced
  • 1 clove garlic
  • 1/8 cup olive oil
  • 2 TBSP vinegar
  • 1 tsp salt
  • 1/8 tsp pepper
  • few drops of hot sauce

    Plunge tomatoes in boiling water for 30 seconds to loosen skins, then immerse in cold water. slip skins off, core and chop coarsely.

    Mix all ingredients cover and chill
