Ingredients

  • 2 large ripe tomatoes
  • 1 large sweet pepper
  • 1 clove garlic
  • 1 sweet onion
  • 1 c. cucumber
  • 1/2 c. fresh herbs
  • 1/4 to 1/2 c. olive oil
  • 1 to 3 c. chilled water, light stock or V-8
  • 3 Tbsp. lemon or lime juice
  • 1/2 tsp. paprika
  • salt to taste
  • black and/or red pepper to taste

Directions

    Into a large bowl, chop the vegetables and herbs.

    Add the remaining ingredients as listed.

    Blend all in a blender by batches.

    Chill.
