Ingredients

  • 3 cans chopped, stewed tomatoes
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 large cucumber, chopped
  • 2 or 3 cloves garlic, minced
  • 1 or 2 Hawaiian peppers, seeded and minced
  • small bunch cilantro, chopped fine
  • Hawaiian rock salt to taste
  • 2 c. V-8 juice
  • 1/4 c. olive oil
  • 1/4 to 1/2 c. wine vinegar
  • garlic croutons

Directions

    In a blender or food processor, blend tomatoes.

    Add fine chopped vegetable, garlic, Hawaiian peppers and cilantro.

    Add V-8 juice, olive oil, vinegar and salt.

    Cover and chill.

    Garnish with garlic croutons.
