  • 1 whole chicken, broken down into 8 pieces
  • vegetable oil, for frying
  • 1 quart buttermilk
  • 1 teaspoon Chinese 5 spice, toasted and ground
  • 1 teaspoon cumin, toasted
  • 1 teaspoon Szechuan peppercorns, toasted
  • 1/4 cup Sriracha
  • 1 cup dehydrated mushroom powder
  • 2 cups all purpose flour
  • 1 teaspoon Chinese 5 spice, toasted and ground
  • 1 teaspoon cumin, toasted and ground
  • 1 teaspoon Szechuan peppercorns, toasted and ground
  • 1/8 cup dehydrated mushroom powder
  • 1 cup honey
  • 1/4 cup garlic, finely chopped
  • 1/4 cup ginger, finely chopped
  • 1/2 bunch cilantro, finely chopped
  • 1 cup Sriracha
  • 1/8 cup fermented shoyu
  • 4 tablespoons dehydrated mushroom powder
  • 1/2 cup Chinese fermented dried black beans
  • 1/2 cup scallions, sliced
  • 1/2 cup leeks, pickled (see below)
  • 1 large leek, just the white part, thinly sliced
  • 1 cup rice vinegar
  • 1 cup sugar
  • 1 cup ice water

Directions

    Whisk all ingredients together until combined.

    To toast spices, place on a baking sheet in a 300F oven for about 10 minutes, or until you start to smell them.

    Spices can then be ground in a spice or coffee grinder.

    (Note: If you cannot find mushroom powder, use salt to taste.)
