- 4 qt. ripe figs
- 5 lb. sugar
- 2 lemons, sliced
Directions

1Wash well select ripe firm figs.

2It is not necessary to peel figs and the stems may be left. Cover the bottom of a large enamel (white) boiler with a layer of sugar.

3Put a layer of figs on top of this.

4Alternate the layers until the figs and sugar are used up, ending with a layer of sugar.

5Be sure sugar covers all the figs.

6Put a cover on boiler and put in the refrigerator overnight.
