  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 4 eggs (well beaten)
  • 2 cups granulated sugar
  • 12 cup orange juice
  • 1 teaspoon orange zest
  • 1 cup vegetable oil
  • 2 12 teaspoons vanilla extract
  • 4 cups thinly sliced peeled apples
  • 2 teaspoons ground cinnamon
  • 3 tablespoons granulated sugar
  • 2 -3 teaspoons confectioners' sugar (optional)

Directions

    Combine the first three ingredients, then set aside.

    In a large bowl, combine the eggs and sugar.

    In a small bowl combine the oil, orange juice, and orange zest.

    Alternately add the juice mixture with dry ingredients to egg mixture.

    Beat until smooth; then add vanilla and blend.

    Pour half of the batter into a greased and floured tube or bundt pan.

    Arrange half the apples over the batter.

    Combine the 2 teaspoons of cinnamon and the 3 Tablespoons sugar.

    Sprinkle half over the apples.

    Top with remaining batter.

    Bake at 350 for 1 hour and 10 minutes or until a toothpick.
