  • 1 1/2 c. flour
  • 1/3 c. sugar
  • 1/8 tsp. salt
  • 1/2 c. butter
  • 1/2 tsp. grated lemon peel
  • 1 egg yolk
  • 6 medium apples, peeled and sliced
  • 1/3 c. sugar
  • 1/4 tsp. cinnamon
  • 1 egg white, beaten stiffly

    Combine flour, sugar and salt together.

    Cut in butter.

    Add lemon rind and egg yolk.

    Mix thoroughly.

    Press into greased 9-inch cake pan (sides and bottom).

    Mix apples with sugar and cinnamon. Fold in beaten egg white. Spread evenly over dough. Bake in a 400° oven for 40 minutes.
