- 6 eggs
- 1 1/2 c. sifted flour
- 1/4 tsp. salt
- 1 Tbsp. sugar
- 1 pt. milk (16 oz.)
- dash or 2 of cinnamon
- juice of 1 lemon
Directions

1Beat 5 minutes in all.

2Beat eggs lightly.

3Beat in the sifted flour, salt, sugar, milk, cinnamon and lemon juice.

4Melt enough butter in a wide frying pan to coat bottom.

5When hot, pour 4 to 5 tablespoons of batter in pan.

6Make batter spread to form a large, thin flat pancake.

7Cook until batter bubbles.

8Turn and bake the other side.

9Slip onto hot plate.

10Serve with small amount of jelly or syrup.

11Be careful not to use too much sweets as the pancakes have a delicious flavor of their own.
