German Potato Salad

  • 10 large potatoes (unpeeled)
  • 1 medium onion
  • 1 tsp. parsley
  • 1 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 c. vinegar
  • 1/4 c. oil

Directions

    Boil potatoes until done.

    Drain and set aside.

    Thinly slice onion in a large mixing bowl.

    Add parsley, salt, pepper, vinegar and oil.

    Stir together and set aside.

    Peel potatoes.

    Slice potatoes in bowl with onion.

    Turn easy after adding each sliced potato so all is coated with dressing when you are finished slicing.

    Cover and let stand overnight.

    Do not refrigerate. Before serving, taste and add more salt, if needed.
