German Potato Salad

  • 5 lb. red potatoes
  • 1 lb. bacon
  • 1/2 c. sugar
  • 2/3 c. vinegar
  • 1 c. water
  • 1 Tbsp. cornstarch (rounded)
  • 2 tsp. salt
  • 2 bunches green onions, entirely chopped
  • 1/4 tsp. fresh ground black pepper

Directions

    Cook potatoes with skins on until tender, drain and cool. Peel and slice into 1/4-inch slices or desired size.

    Cut bacon into 1-inch pieces and fry until crisp but not burnt.

    Remove and drain bacon, saving 1/4 cup bacon drippings.

    Mix cornstarch and water together.

    Heat sugar, vinegar, bacon drippings, salt and pepper.

    Then add cornstarch mixture to thicken.

    Stir constantly. Pour hot mixture over potatoes, bacon and green onions.

    Mix and serve while hot.
