German Spaetzle

  • 1-1/4 cup Flour
  • 1/2 teaspoons Salt
  • 1/8 teaspoons Pepper
  • 3/4 teaspoons Nutmeg
  • 2 whole Eggs
  • 1/4 cups Milk
  • 3 Tablespoons Butter

Directions

    In a medium sized bowl, mix together the flour, salt, pepper and nutmeg. Add the eggs and milk into the bowl and mix until completely combined.

    Boil about 5 cups of water in a medium sized pot. Using a metal cheese grater, mash the spaetzle mixture through the grater and into the pot of boiling water. It should form tiny, string-like pieces of dough. If needed, make the spaetzle in batches. Bring the water down to simmering on medium low. Cook for about 5-8 minutes. Strain it out of the pot with a slotted spoon or a metal strainer and set aside in a bowl.

    In a saucepan over medium heat, melt half of the butter. Saute half of the spaetzle in the butter. Stir and cook until browned to your liking then move it to a bowl to cool. Do the same with the remaining butter and spaetzle. Enjoy!
