- 3/4 3/4 cup coconut milk or 3/4 cup nut milk
- 2 tablespoons vinegar
- 3/4 cup gluten-free rice flour mix
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 large egg
- 2 tablespoons olive oil
- 1 teaspoon vanilla extract
Directions

11 Mix milk with vinegar, leave it for 5 minutes.

22 Add egg, olive oil, and vanilla extract to milk mixture.

33 Add flour mix, sugar, baking powder, baking soda, salt. Mix together.
