Ingredients
- 1 (18 ounce) package polenta, pre-cooked and gluten-free (you could also use 1-2 corn tortillas instead if you have no polenta)
- 1 (28 ounce) can diced tomatoes
- 1 onion
- 3 garlic cloves
- 1 cup lentils
- 1 green pepper
- 1 teaspoon taco seasoning or 1 teaspoon chili powder, gluten free
- 12 teaspoon salt
Directions

1Boil lentils in plenty of water for 30 minutes, then drain.

2You may want to rinse it off too, if you don't particularly like the lentil taste.

3This is purely for a cheap source of protein.

4In a fry pan, add onion, garlic, salt and green pepper.

5Saute for about 5 minutes.

6If you need to use an oil, try coconut or olive.

7Not butter.

8Add canned tomatoes, lentils, and seasoning and cook through until hot.

9Line pan with thin slices of polenta, add filling, then top with polenta.

10Put in oven at 350 degrees F for about 30 minutes.
