  • 2 Tbsp. chopped fresh gingerroot or 2 tsp. dried ground ginger
  • 1 can (10 fl oz/284 mL) condensed beef broth
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 2 oranges, peeled, sectioned, seeds removed Safeway 1 lb For $0.79 thru 02/09
  • 1-1/2 cups instant white rice, uncooked

Directions

    Cook and stir beef in oil, in large non-stick frying pan, on high heat for 2 minutes.

    Stir in onion and ginger; cook and stir an additional minute.

    Add beef broth; bring to a boil.

    Stir in broccoli, carrots, oranges and rice; cover.

    Let stand 5 minutes.

    Stir and serve.
