Ginger Chicken Noodles

Ingredients

  • 2 None chicken breasts, halved horizontally
  • 9 oz soba noodles, cooked
  • 5.25 oz snow peas, trimmed, sliced
  • 1 None carrot, peeled, julienned
  • 2 stalks celery, julienned
  • 3 None spring onions, sliced
  • None None Dressing
  • 2 tbsp avocado oil
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tbsp pickled ginger, finely shredded
  • 1 tsp wasabi paste
  • 1 tsp sesame oil
  • None None fresh cilantro leaves, to serve

Directions

    Heat a large frying pan over high heat. Lightly coat chicken with olive oil and season. Cook for 2-3 mins per side, or until cooked through. Let cool slightly then slice into strips. Combine with noodles and vegetables.

    Meanwhile, to make the dressing, whisk together all ingredients. Drizzle 1/2 over chicken salad and toss to combine. Drizzle remaining dressing over top and sprinkle with cilantro to serve.
