Ginger Lemon Rice

- 4 scallions, chopped
- 1 1/2 cup white rice
- 1 3 inch piece of fresh ginger, peeled
- 1 zest and juice of 1 lemon
- 2 3/4 cup chicken stock
Directions

1In a sauce pot that has a tight fitting lid, combine the chicken stock, lemon zest, and ginger.

2Cover and bring to a boil over high heat.

3Add the rice.

4Stir.

5Bring back up to a simmer, then cover and cook over low heat for 18 to 20 minutes, or until tender.

6Discard the ginger.

7Add the scallions and lemon juice, and fluff the rice with a fork until the scallions are well distributed.
