Ginger Lime Scallops

Ingredients
- 1 lb. scallops
- 3 Tbsp. Key lime juice
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1/3 c. walnuts
- 1/4 c. parsley, chopped
- 1/2 stick butter
- 1 tsp. fresh ground ginger
- 2 tsp. lime zest
- salt and pepper to taste
Directions

1Mix room temperature butter with ginger, zest, salt and pepper.

2Refrigerate until firm.

3Dry scallops; saute until golden in oil.

4Drain.

5Stir in lime juice and saute 1 minute.

6Lower heat and add butter mixture one tablespoon until sauce thickens. Stir in nuts and sprinkle with parsley.

7Serves 2.
