Ginger Molasses Cookies

Ingredients
- 2 1/4 c. flour
- 2 tsp. ground ginger
- 1 tsp. ground cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 12 Tbsp. unsalted butter (at room temperature)
- 1 c. brown sugar
- 1 egg
- 1/3 c. molasses
- granulated sugar for rolling
Directions

1Combine flour, ginger, cinnamon, baking soda and salt.

2With an electric mixer set at medium low speed, beat butter and sugar until fluffy.

3Beat in egg and molasses.

4Reduce speed to low and gradually beat in flour mixture until just incorporated.

5Chill until firm, about 1 hour.

6Heat oven to 350°.

7Shape into 1-inch balls.

8Roll in sugar and place about 2 inches apart on ungreased cookie sheet.

9Bake until edges just start to brown, about 15 minutes.

10Cool on cookie sheet 2 minutes before removing to racks. Cool completely.

11Makes 6 dozen.
