- 1 stick Butter, Softened
- 1 cup Brown Sugar
- 1/4 cups Molasses
- 1 whole Egg
- 2 cups Flour
- 1 teaspoon Baking Soda
- 1 Tablespoon Ground Ginger
- 1 teaspoon Cinnamon
- 1/8 teaspoons Ground Clove, Just A Pinch
- 1/2 cups Granulated Sugar For Rolling Balls
Directions

1Cream together the butter and sugar. Add molasses and egg. Mix well. Blend in dry ingredients (all remaining ingredients except the final 1/2 cup of sugar) until incorporated.

2Preheat oven to 350 degrees F. Roll small balls of dough {teaspoon size} in granulated sugar. Place balls on a Silpat or parchment lined baking sheet. Bake for 10-11 minutes for crisp ginger pennies. Cool and store in airtight container.
