- 1 cup peeled and chopped fresh ginger
- 1 cup sugar
- 1 cup fresh lemon juice
Directions

1Combine the ginger, sugar, and lemon juice in a small saucepan.

2Bring to a boil, stirring to dissolve the sugar.

3Remove from the heat and let cool to room temperature.

4Strain through a sieve into a container, pressing on the ginger; discard the ginger.

5The syrup can be covered and refrigerated for up to 3 days.
