- 1 medium red onion, chopped
- 2 garlic cloves, mined
- 1 tablespoon ginger, minced
- 1 (15 ounce) can diced tomatoes, unseasoned
- 1/2 cup red wine vinegar
- 1/2 cup light brown sugar
- 1/2 cup golden raisin
- 2 tablespoons olive oil
- 1/4 teaspoon salt
Directions

1Heat oil in a sauce pan to medium heat and add onion. Cook for 4 minutes. Add garlic and ginger. Cook for another 2-3 minutes. Add tomatoes, vinegar, sugar, salt, and raisins. Simmer, stirring occasionally until thickened (about 30-40 minutes).

2Cool completely and serve as a condiment.
