  • 8 tbsp (1 stick) butter
  • 1/2 cup firmly packed light brown sugar
  • 1/2 cup molasses
  • 3 cups flour
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 2 tsp baking soda
  • 1 None egg, lightly beaten
  • 1 tsp vanilla extract
  • 1 None egg white
  • 1 cup powdered sugar
  • None None Assorted food colors

    Preheat the oven to 350°F. Grease 3 baking pans.

    Combine butter, brown sugar and molasses in a medium microwave-safe bowl. Microwave, uncovered, on high for 1 min, or until butter has melted. Cool for 5 mins.

    Sift combined flour, spices and baking soda into a large bowl. Stir in butter mixture, whole egg and vanilla.

    Divide dough in half. Knead each portion on a floured surface. Roll out between sheets of parchment paper to 1/4-inch thickness. Using gingerbread-people cutters, cut out shapes and place on prepared pans. Bake for 10 mins. Cool in pans on wire racks.

    For the royal icing, beat egg white in a medium bowl with an electric mixer until just frothy. Gradually add sifted powdered sugar, beating between additions, until stiff peaks form.

    Divide icing into small bowls and tint as desired with food colors. Decorate gingerbread people with colored icings.
