  • 2 Granny Smith apples cut into small cubes
  • 2 large carrots peeled and grated
  • 1/2 cup dried sweetened cranberries
  • 1/4 cup chopped walnuts
  • 1 cup light mayonnaise or Vegenaise
  • 3 tablespoons seasoned rice vinegar
  • 1 teaspoon ginger powder
  • fresh ground black pepper to taste

Directions

    Place apples, carrots, cranberries, walnuts, and mayonnaise into a large bowl and gently stir.
