Ingredients

  • 3 cups Squash (yellow Or Other Type), Cooked, Drained And Sliced
  • 1 whole Large Onion, Chopped
  • 4 Tablespoons Butter
  • 1/2 cups Sour Cream
  • 1 cup Cheddar Cheese, Grated
  • 1 teaspoon Mixed Seasoning Such As Tony Chachere's
  • 1 cup Ritz Crackers Crushed Up, Plus Additional For Topping

Directions

    Cook (I usually boil it or steam it) and drain the squash, then cut/slice it up and set it aside.

    Preheat oven to 350°.

    Saute onion in butter until caramelized. Remove from the pan and mix all ingredients together. Pour into a buttered casserole dish and top with the additional Ritz cracker crumbs. Bake for 25 to 30 minutes.

    Note: You can substitute cabbage for the squash.
