Ingredients

  • 2 breasts of chicken, (skinless and cut into small pieces)
  • 1 medium onion
  • 1 to 2 carrots
  • 1 tsp. allspice
  • salt and pepper
  • 1 c. chicken stock
  • 2 to 3 Tbsp. butter or margarine
  • 1 to 2 cloves garlic
  • 1 tsp. lemon juice
  • 1/2 lb. mushrooms or 8 oz. can
  • 1 tomato (finely chopped)
  • 1/4 tsp. turmeric powder
  • pinch of hot ground pepper (optional)
  • 1/4 tsp. sugar

Directions

    Melt butter in pan on medium heat.

    Add garlic and onions. Cook for about 4 minutes.

    Add chicken pieces.

    Cook on medium heat for 8 minutes.

    Then add cut up mushrooms, carrots, tomato, allspice, turmeric powder, salt, pepper and hot pepper.

    Cook 4 to 5 minutes on low heat, then add the stock.

    (The stock can be made by boiling the chicken skin and bones in water.)

    Cover with lid and cook for 10 to 15 minutes on low heat.

    Add sugar and lemon juice right before you serve the dish.

    Serve over rice.
