- 4 lb. brisket
- salt and pepper
- 1 onion, diced
- 2 c. water
- 4 slices canned pineapple
- 6 Tbsp. honey
- 1/2 c. pineapple juice
- 4 Tbsp. sugar
- 1/4 c. water
Directions

1Place meat, seasoned with salt and pepper, onion and water in Dutch oven.

2Cook until tender, about 2 1/2 hours.

3Place in roasting pan and secure pineapple to top of meat with toothpicks. Boil honey, juice, sugar and water.

4Pour over meat.

5Roast at 425° for 35 minutes, basting every 10 minutes.

6Add more water if pan gets dry.
