Glazed Brisket

  • 4 lb. brisket
  • salt and pepper
  • 1 onion, diced
  • 2 c. water
  • 4 slices canned pineapple
  • 6 Tbsp. honey
  • 1/2 c. pineapple juice
  • 4 Tbsp. sugar
  • 1/4 c. water

Directions

    Place meat, seasoned with salt and pepper, onion and water in Dutch oven.

    Cook until tender, about 2 1/2 hours.

    Place in roasting pan and secure pineapple to top of meat with toothpicks. Boil honey, juice, sugar and water.

    Pour over meat.

    Roast at 425° for 35 minutes, basting every 10 minutes.

    Add more water if pan gets dry.
