Glazed Broiled Tomatoes

  • 3 medium tomatoes (ripe)
  • 3 Tbsp. mayonnaise
  • 1 tsp. Dijon mustard
  • 2 tsp. parsley
  • 1/2 tsp. chives
  • 1/4 tsp. salt
  • pinch of fresh ground pepper
  • 3 Tbsp. Parmesan cheese

Directions

    Preheat oven to 400°.

    Cut tomatoes into 3/4-inch slices. Place in single layer on baking sheet.

    Combine mayonnaise, mustard, 1 teaspoon parsley, chives, salt, pepper and Parmesan cheese in a small bowl.

    Spread mixture over each tomato slice. Sprinkle with remaining Parmesan cheese.

    Bake about 10 minutes. Immediately transfer to broiler (6-inches from heat).

    Broil until topping is golden, glazed and bubbly.

    Sprinkle with remaining parsley.

    Serve at once.
