- 3 medium tomatoes (ripe)
- 3 Tbsp. mayonnaise
- 1 tsp. Dijon mustard
- 2 tsp. parsley
- 1/2 tsp. chives
- 1/4 tsp. salt
- pinch of fresh ground pepper
- 3 Tbsp. Parmesan cheese
Directions

1Preheat oven to 400°.

2Cut tomatoes into 3/4-inch slices. Place in single layer on baking sheet.

3Combine mayonnaise, mustard, 1 teaspoon parsley, chives, salt, pepper and Parmesan cheese in a small bowl.

4Spread mixture over each tomato slice. Sprinkle with remaining Parmesan cheese.

5Bake about 10 minutes. Immediately transfer to broiler (6-inches from heat).

6Broil until topping is golden, glazed and bubbly.

7Sprinkle with remaining parsley.

8Serve at once.
