- 6 large carrots
- 1/3 c. apple juice
- 3 Tbsp. butter
- 2 tsp. brown sugar
- 1/4 tsp. salt
- 1 Tbsp. parsley
Directions

1In a food processor, with the slicing blade, cut the carrots into thin slices.

2In a medium sauce pan, bring the apple juice, butter and brown sugar to a boil over medium-high heat.

3Stir in the salt.

4Add the carrots, reduce the heat to medium.

5Cover and simmer, stirring often until tender, 5 to 8 minutes.

6Cook the carrots uncovered for the last minute or so to reduce the cooking liquid to a glaze.

7Toss the carrots with the parsley.

8Serve.
