- 4 c. sliced carrots
- 3/4 c. diced onions
- 1 c. Velveeta
- 1 stick margarine
- 2 Tbsp. brown sugar
- 6 Saltine crackers or breadcrumbs
Directions

1Bring carrots and onions to a boil.

2Cook until tender; drain. While carrots boil, melt cheese and margarine in double boiler. Combine carrots, onions and cheese mixture in casserole dish. Sprinkle brown sugar and crumbled crackers on top before baking. Bake at 350° for 30 minutes.

3For large functions (church dinners!) double this recipe.
