- 1/3 c. granulated sugar
- 1 Tbsp. flour
- 1 tsp. salt
- 2 tsp. grated orange peel
- 3/4 c. orange juice
- 2 Tbsp. butter or margarine
- 2 1/2 lb. carrots, peeled and cut diagonally in 1/4-inch thick slices (8 c.), cooked and drained
Directions

1Mix sugar, flour and salt in medium-size saucepan.

2Stir in orange peel and juice.

3Bring to boil over medium heat.

4Reduce heat to low; stir in butter.

5Simmer for 2 minutes or until thickened and syrupy.

6Add carrots.

7Stir to coat and glaze. Transfer to serving dish.

8Garnish with chopped parsley.
