Glazed Carrots

  • 1/3 c. granulated sugar
  • 1 Tbsp. flour
  • 1 tsp. salt
  • 2 tsp. grated orange peel
  • 3/4 c. orange juice
  • 2 Tbsp. butter or margarine
  • 2 1/2 lb. carrots, peeled and cut diagonally in 1/4-inch thick slices (8 c.), cooked and drained

    Mix sugar, flour and salt in medium-size saucepan.

    Stir in orange peel and juice.

    Bring to boil over medium heat.

    Reduce heat to low; stir in butter.

    Simmer for 2 minutes or until thickened and syrupy.

    Add carrots.

    Stir to coat and glaze. Transfer to serving dish.

    Garnish with chopped parsley.
