Glazed Cornish Hens

- 6 hens
- 2 tsp. salt
- 2 tsp. crumbled rosemary, Bells seasoning or both
- 1/4 tsp. ground cloves
- 1 tsp. grated orange rind
- 1 c. dried apricot halves
- 1 c. applesauce or apricot preserves
- 1 c. white wine
- 1/4 c. brown sugar, firmly packed
Directions

1Sprinkle hens inside and out with salt and rosemary.

2Roast in a 350° oven for 1 hour.

3While hens are roasting, chop apricots; add to applesauce and wine in medium saucepan.

4Stir in orange rind, brown sugar and ground cloves.

5Simmer for about 30 minutes, until apricots are tender.

6Spoon glaze over hens; roast 30 minutes longer.
