Glazed Cornish Hens

  • 6 hens
  • 2 tsp. salt
  • 2 tsp. crumbled rosemary, Bells seasoning or both
  • 1/4 tsp. ground cloves
  • 1 tsp. grated orange rind
  • 1 c. dried apricot halves
  • 1 c. applesauce or apricot preserves
  • 1 c. white wine
  • 1/4 c. brown sugar, firmly packed

Directions

    Sprinkle hens inside and out with salt and rosemary.

    Roast in a 350° oven for 1 hour.

    While hens are roasting, chop apricots; add to applesauce and wine in medium saucepan.

    Stir in orange rind, brown sugar and ground cloves.

    Simmer for about 30 minutes, until apricots are tender.

    Spoon glaze over hens; roast 30 minutes longer.
