- 2 tablespoons cornstarch
- 1/2 cup water
- 3 pounds fresh, ripe peaches
- 1/4 teaspoon almond extract
- 1 baked (9-inch) pastry shell
Directions

1Combine sugar, cornstarch, and water in a heavy saucepan; stir well.

2Peel and slice 6 peaches; add peaches to sugar mixture. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Cool. Stir in almond extract.

3Peel and slice remaining peaches. Arrange peach slices in pastry shell. Pour glaze over peaches, coating well. Chill.
