- 11 whole graham crackers (5 1/2 ounces)
- 1/4 cup (packed) golden brown sugar
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 5 tablespoons unsalted butter, melted
- 3 8-ounce packages cream cheese, room temperature
- 1 cup sugar
- 4 large eggs
- 1 cup sour cream
- 1 tablespoon finely grated lemon peel
- 2 teaspoons vanilla extract
- 3/4 cup orange juice
- 1/2 cup red currant jelly
- 1/4 cup (packed) golden brown sugar
- 3 1/4-inch-thick slices fresh ginger
- 6 large ripe red-skinned plums, halved, pitted, cut into 1/2-inch-thick wedges

1Preheat oven to 350F.

2Lightly butter 9-inch-diameter springform pan with 2 3/4-inch-high sides.

3Combine graham crackers, brown sugar, cinnamon and salt in processor.

4Process until fine crumbs form.

5Mix in melted butter.

6Transfer to prepared pan.

7Pat crumb mixture over bottom (not sides) of pan.
