  • 5 pounds pork loin roast
  • 2 teaspoons minced ginger
  • 1/4 cup orange juice
  • 1/2 cup apricot jam

Directions

    Put meat, fat side up, in a roasting pan. Roast in electric oven at 325 degrees until meat thermometer registers 160 degrees, about 1-3/4 hours.

    Combine jam, juice, and ginger; brush onto meat. Continue cooking until thermometer registers 170 degrees, basting occasionally with sauce to form glaze.
