Glazed Scallops

  • 12 sea scallops large, patted dry
  • 1 tablespoon olive oil
  • 3 tablespoons pomegranate citrus roasting glaze
  • 1 teaspoon kosher salt
  • fresh parsley
  • 1/4 cup pomegranate seeds

Directions

    Remove tough ligament from side of each scallop, if attached. Season with salt and freshly ground black pepper and set aside.

    Heat medium oil in a medium skillet set over medium-high heat. Cook half the scallops until browned on one side, about 2 minutes. Flip, brush with half of the glaze, and cook an additional 2-3 minutes until they are no longer translucent. Remove scallops from skillet and repeat with remaining scallops and glaze.

    Garnish with freshly parsley and pomegranate seeds to serve.
