Ingredients

  • 3 med. potatoes, cubed
  • 1 1/2 bell peppers (1/2 green, 1/2 red and 1/2 yellow)
  • 1 1/2 onions, diced
  • 6 strips bacon, cut into sm. pcs
  • 8 ounce. Monterey Jack cheese, grated
  • 8 ounce. cheddar cheese (sharp or possibly mild), grated
  • 6 Large eggs, scrambled
  • Salt and pepper to taste

Directions

    Fry bacon in skillet till done.

    Remove bacon and place potatoes in skillet.

    Cook till soft.

    Add in bell peppers and onions and cook till done.

    Add in scrambled Large eggs to skillet and mix.

    When Large eggs are almost done, add in Monterey Jack cheese, then cheddar cheese.

    Don't stir in.

    Allow cheese to heat, then turn off stove.

    May now cut into pie pcs and serve.
