- 1/4 cup cornmeal champion yellow
- 1 1/2 cups flour, all-purpose sifted
- 1/4 cup sugar
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1 large eggs beaten
- 1/4 cup milk
- 1/2 cup butter melted, or other fat
Directions

1Sift yellow corn meal, sifted flour, sugar, salt and baking powder into bowl.

2Add beaten egg and milk, stirring lightly; fold in melted fat.

3Bake in greased 8 inch square or greased muffin pans in hot oven 425F (220C) for 20 to 25 minutes.

4Serve warm with butter or covered with creamed chicken, fish or meat.

5Note: This recipe was from the back of a Champion corn meal package.
