Golden Ginger Punch

  • 6 ounces fresh ginger, plus 1/2 cup fresh ginger matchsticks, for garnish
  • 4 quarts pineapple juice, preferably fresh (from about 8 pineapples)
  • 1 bottle (750 ml) vodka

Directions

    Puree the 6 ounces of ginger in a food processor.

    Scrape the ginger into a fine sieve set over a small bowl and press hard to extract the juice.

    Discard the solids.

    In a large punch bowl, stir together the pineapple juice, vodka and ginger juice.

    Add the ginger matchsticks and serve in tall glasses over ice.
