- 2 slices bread whole wheat or whole grain
- 2 tablespoons basil pesto basil or any your favorite flavor
- 1/4 each cucumbers washed, peeled if needed, slice into 1/4-inch rounds
- 1/2 each sweet red bell peppers, roasted slice into strips
- 2 each artichoke hearts marinated, drained and sliced
- 1 each lettuce leaves torn into pieces, or any your favorite greens
Directions

1Spread 1 tablespoon of basil pesto on each slice of bread.

2Top one slice with cucumber rounds, roasted bell pepper strips, artichoke hearts and lettuce.

3Place the other slice on top, and press to form a sandwich.
