Good Old-Fashioned Mashed Potatoes

- 2 lb. red potatoes
- .67 c. half-and-half
- 1/4 c. butter or margarine
- 1/2 tsp. salt
- 1/4 tsp. Pepper
- 1/4 c. crumbled Stilton or shredded cheddar cheese
Directions

1Place potatoes in large pot of salted water.

2Cover and bring to a boil.

3Remove cover, reduce heat, and simmer 15 to 20 minutes, until tender when pierced with a fork.

4Drain well.

5Heat half-and-half and butter in potato cooking pot.

6Return potatoes to pot, remove from heat, and mash until smooth.

7Stir in salt and pepper.

8For cheese potatoes, place in shallow baking dish and top with cheese, bake at 350 degrees just until cheese melts.
