- pastry for 2-crust 9-inch pie
- 1 1/2 c. sugar
- 3 c. gooseberries, washed and stemmed
- 3 Tbsp. quick cooking tapioca
- 1/4 tsp. salt
- 2 Tbsp. butter or margarine
Directions

1Roll out half of pastry for bottom crust.

2Line a 9-inch pie plate.

3Crush 1/2 cup of the berries.

4Combine with sugar, tapioca and salt.

5Cook and stir until thickened and bubbly.

6Add remaining berries.

7Pour into pastry shell; dot with butter or margarine.

8Roll out remaining pastry; adjust top crust.

9Seal and flute edges; cut slits for steam to escape.

10Bake in 400° oven for 30 to 40 minutes or until browned.

11Serve pie warm.
