- 1 large onion, chopped
- 1 clove garlic, mashed
- 1 stick butter or margarine
- 1/2 lb. mushrooms, sliced
- 4 medium zucchini, sliced
- 1 (3 oz.) jar chopped pimento
- 1/2 lb. Gouda cheese, sliced thin
Directions

1Saute onion and garlic in butter in a large skillet. Add mushrooms. Salt and pepper to taste.

2Lay zucchini slices on top. Add pimento.

3Cover skillet and cook over low heat for 15 to 20 minutes.

4Lay cheese slices over top. Cover skillet until cheese melts.

5Leftovers are good.

6Serves 4 to 6.
