  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 Tbsp. fat
  • 2 c. stewed tomatoes
  • 1 tsp. sugar
  • salt and pepper
  • 2 c. cooked kidney beans
  • 2 c. cooked rice

Directions

    Cook onion and green pepper in fat until lightly browned.

    Add tomatoes, sugar, salt and pepper to taste.

    Simmer 5 to 10 minutes.

    Add beans and rice; mix.

    Turn into casserole.

    Bake in 250° to 300° oven for 20 minutes or until thoroughly heated.
