- 1 c. uncooked rice
- 2 large carrots, finely chopped
- 1/2 c. chopped green pepper
- 1/4 c. chopped onion
- 1/2 lb. Velveeta cheese, cut in cubes
Directions

1Brown beef in large skillet until lightly browned and drain. Add all ingredients except cheese.
