- 6 Maine potatoes
- 2 c. shredded Cheddar
- 1/4 c. margarine
- 1 1/2 c. sour cream
- 1/3 c. chopped onion
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. margarine
Directions

1Cook potatoes in skins.

2Cool, peel and shred coarsely.

3In saucepan, over low heat, combine cheese and 1/4 cup margarine, stirring constantly, until almost melted.

4Remove from heat. Blend in sour cream, onions, salt and pepper.

5Fold in potatoes and place in 2-quart casserole.

6Dot with remaining margarine. Can be refrigerated overnight or bake at 350° for 25 minutes.
