- 6 medium potatoes
- 2 c. shredded Cheddar
- 1/4 c. butter or margarine
- 1 1/2 c. sour cream
- 1/3 c. chopped onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. paprika (if desired, for top)
Directions

1Boil potatoes in skins until cooked, but not too soft.

2Peel and shred.

3In saucepan, melt cheese and butter.

4Remove from heat and add sour cream, onion, salt and pepper.

5Fold in potatoes. Put into greased 2 quart casserole dish.

6Bake at 350° for 30 minutes or until heated.
