  • 6 medium potatoes
  • 2 c. shredded Cheddar
  • 1/4 c. butter or margarine
  • 1 1/2 c. sour cream
  • 1/3 c. chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika (if desired, for top)

Directions

    Boil potatoes in skins until cooked, but not too soft.

    Peel and shred.

    In saucepan, melt cheese and butter.

    Remove from heat and add sour cream, onion, salt and pepper.

    Fold in potatoes. Put into greased 2 quart casserole dish.

    Bake at 350° for 30 minutes or until heated.
