Ingredients
- 6 good sized potatoes
- 2 c. shredded Cheddar cheese
- 1/4 c. butter or oleo
- 1 lb. sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
- paprika
Directions

1Cook potatoes in skins.

2Cool, peel and shred coarsely.

3In saucepan, melt butter over low heat.

4Add cheese and stir until almost melted.

5Remove from heat and blend in sour cream, salt and pepper.

6Mix with shredded potatoes.

7Bake in a 2-quart casserole and sprinkle with paprika for color.

8Bake at 350° for 30 minutes or until heated through.

9Best if made day before and stored in refrigerator until ready to bake.
