- 6 medium potatoes
- 1/4 c. butter
- 2 c. shredded Cheddar cheese
- 1/2 c. sour cream
- 1 Tbsp. minced onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Cook potatoes.

2Peel and shred coarsely.

3Heat butter in a saucepan.

4Remove from heat.

5Add the cheese to the butter.

6Stir until partially melted.

7Blend in sour cream, onion, salt and pepper.

8Fold this mixture into potatoes.

9Place in a greased 2-quart casserole dish; dot with butter.

10Bake uncovered at 350° for 30 minutes.
